Fresh pastas:  our pasta is home-made. We use different kinds of flour: wheat flour, wholemeal        , Altamura’s wheat flour, maize flour. We have different kinds of pastas, according to the season : the traditional “Ombrichelli”(thick, square spaghetti), “tagliatelle”, “pappardelle” and “tagliolini” (fresh pasta cut in thick ribbons), “tortelloni” stuffed with chicory, goat cheese, artichokes, buttermilk curd and spinach, meat, broad beans and other ingredients
